Vada Pav


Vada Pav is the most popular street food of Mumbai.Vada Pav is often likened to an Indian-style burger.
Vada pav (Marathi: वडा पाव), sometimes spelled Wada pav or vada pav or vada pao or wada pao, is a vegetarian fast food dish native to the Indian state of Maharashtra.

Ingredients for Vada Pav Recipe




  • Potatoes boiled and peeled 6 large

  • Pav

  • Oil

  • Asafoetida a pinch

  • Turmeric powder

  • Green chilli-garlic paste

  • Salt to taste

  • Fresh coriander leaves chopped

  • Lemon juice

  • Loaves of bread (pav)

  • For Batter

  • Coarse gram flour (besan)

  • Salt to taste

  • Red chilli powder

  • Turmeric powder


Method

Heat oil and add black mustard seeds and a few curry leaves. When the mustard seeds splutter, add the chilli-garlic-ginger paste and fry for 20 seconds until fragrant.

Then, add the mashed potatoes, turmeric powder, a pinch of hing or asafoetida, and salt to taste.

mix well until the mixture is well combined. Don’t add any water, the batata vada mixture should be thick.Now add coriander.

Now we make the coating for the batata vada. Place besan (gram flour), turmeric powder, red chilli powder and some salt in a bowl. Mix well to combine.

Add enough water to make a thick paste.

Divide the potato mixture into equal balls and coat in the prepared batter.

Once the vada is golden brown.

drain and set aside.

To assemble the vada pav

Place a green chutney on one side of the pav or burger. Place a batata vada over it and top off with a sprinkle of garlic chutney.Serve with fried green chillies .

Tips -
ketchup and any chutney go well with vada pav too.

Butter Milk (chaas)


Buttermilk (chaas) is famous and tasty Indian drink .Buttermilk is a cold and refreshing beverage on a hot summer day. It's made all over India with some variations. It is also known as Chaas. This is very helpful in digestion.

Ingredients



3 cup yoghurt

2 cup water

1 tsp corn flour

1 tsp black salt

1 tsp chaat masala


A pinch of asafoetida (hing)

Salt to taste

A few curry leaves (kadi patta)

2 tbsp chopped coriander

2 tbsp dry pudina (mint)


Method

Mix curd and water.

Blend for 2 minutes.

Put all Ingredients black salt,chaat masala, asafoetida,curry leaves,coriander,mint.

Blend for 2 minute and buttermilk is ready to serve .you can garnish with ,coriander,mint and serve chilled.

Consistency of buttermilk can be adjusted to your liking.

Dal - Baati




Regular baati,Baafla baati,Fried baati
Dal baati is an Indian dish comprising dal (lentils) and baati (hard wheat rolls).It is popular in Rajasthan, Uttar Pradesh and Madhya Pradesh. Crispy outside and soft inside, this wheat ball is often served with Choorma and Buttermilk ( Masala Chhaas). Baati is of 3 types:
Regular baati
Baafla baati
Fried baati

It is best eaten by crushing and pouring ghee and dal. It is a quintessential part of Rajasthani wedding and now a days is popular in whole of India.

Preparation Time : 15 mins.

Cooking Time : 1hour

Serves 6

Ingredients

For the Baatis (for 9 baatis)

1 cup whole wheat flour (gehun ka atta)
1/2 cup semolina (rava)
2 tbsp besan (Bengal gram flour)
4 tbsp melted ghee
pinch of ajwain ( celery seed )
salt to taste
For serving
melted ghee

For the Dal

1/2 cup chana dal (split Bengal gram)
1 cup urad dal (split black lentils)
3 tsp chilli powder
1/4 tsp turmeric powder (haldi)
1 tsp coriander (dhania) powder
1/2 tsp garam masala
1 tsp cumin seeds (jeera)
2 green chillies, slit
3 tbsp oil
5 curry leaves
1 tsp ginger garlic paste
2 dry red chillies
salt to taste

Method

For the baatis

Mix all the ingredients ( wheat flour,semolina,Bengal gram flour,melted ghee,ajwain,salt)

knead into a firm dough. Knead well for 6 to 8 minutes.

Divide the dough into 9 equal portions and shape each portion into an even sized round. Flatten the rounds lightly between the palms of your hand.

Heat a gas tandoor (baati cooker) and put the baatis on the grill of the tandoor.Put the lid cook them on a medium flame for 25 to 30 minutes. cracks appear on them when they are Cooked. to ensure uniform cooking, keep turning them over.

Now you can see our baatis are ready. serve the baatis on a plate. Break each baati into two pieces and pour melted ghee over it.

For the dal

Put oil in a frying pan on medium flame for 2 minutes.

Add all Ingredients ( one by one ) cumin seeds,ginger garlic paste,green chillies,curry leaves,dry red chillies,turmeric powder,coriander powder,garam masala,chilli powder,salt .saute it for half a minute and add 1 cups of water.

cook the spices till the water is evaporated.At this stage, spices are cooked.

Now add boiled dal (chana dal and urad dal )

Add 3 cups of water and boil the dal for 15 minutes.

Garnish the dal with coriander.It is ready to be served.

Tips
Any variety of dal can be added.( as per your choice )
Dal can be eaten with chapati also .
You may squeeze 2 or 3 drops of lemon juice.
Chopped Onions can be added in dal.
